A rainy day like this calls for comfort food! This recipe is adapted from the Avoca Cookbook using whatever ingredients I could find, even with only half a red onion, it was more than enough for the sauce and the meatballs.
Makes 2 portions
For the sauce
1/4 red onion- chopped
1 tin chopped tomatoes
1 clove garlic- chopped
3 chopped sundried tomatoes
Oregano
Basil
Chilli Powder
Tabasco sauce
Pepper
For the Meatballs
300g steak mince
1/4 red onion- chopped
1 egg
Pepper
Flour
For the sauce, chop the onion, garlic and sundried tomatoes and gently saute.
Add in the tinned tomatoes and herbs and simmer.
For the meatballs mix the red onion, mince, egg and pepper and form into small balls on a floured surface.
Fry the meatballs for approx 15 mins, transfer them to the sauce and simmer for additional 5 mins.
Serve with spaghetti and garnish with basil.
